It’s the most wonderful time of the year! I am so excited for Christmas & all that comes with it! Decorating the house, the lights, shopping, the food, and the desserts!
There are so many flavors that remind me of the holiday season and peppermint is definitely one of them. Sure, you can have peppermint all year round, but there’s something about the holidays and peppermint. It makes me think of warm fireplaces and hot chocolate…even if it is 80 degrees in South Florida!
I know I’m not the only “exhausted” one out there with no time to “do it all.” That’s why I have this recipe for White Chocolate Peppermint Brownies that uses boxed brownie mix! (Ssshhhhh….don’t tell anyone!) People will think you have super powers or something. You’re welcome.
Ingredients
- 1 box Fudge Brownie Mix
- Eggs (per box directions)
- Oil (per box directions)
- 1/2 tsp Peppermint Extract
- 10 oz Peppermint melting chips (can use White melting chips as well)
- 1/4 cup crushed Candy Canes or Starlight Mints
Preparations
- Crush peppermint candies in food processor.
- Prepare brownie mix according to box directions, but add 1/4 teaspoon peppermint extract when mixing.
- Allow brownies to cool.
- Melt candy chips by microwaving for 60 seconds then stirring and repeating until melted and smooth.
- (If you used white chips, add 1/4 teaspoon peppermint extract to melted chips. and stir to mix.)
- Quickly spread melted candy evenly over top of brownies and sprinkle with crushed mints.
- Cut before the chocolate sets up.
